Chef Paul has raised our students’ awareness of how eating healthy can be both fun and delicious. After training with numerous other Culinary Institute chefs, Chef Paul O’Toole of Deerfield visited the White House last summer to be commissioned by Michelle Obama. His mission was to carry the First Lady’s dream, of the nation’s children embracing fresh and healthy eating, into a school. It’s called the Chefs Move to Schools initiative of the Let’s Move! program.
Chef Paul chose the Urban Promise School. Throughout the school year he faithfully came to visit with lessons prepared for all of the classes, which included fruit and vegetable identification, food analysis, cooking demonstrations, and of course tasting the delicious final product. Chef Paul was always accompanied by his daughterJulie, who earned high school credit for her community service and participation in this program. By the end of the year students loved both Chef Paul and Julie. In addition they learned that healthy eating is life changing, powerful and fun!
Chef Paul will be returning in the fall to continue these valuable lessons. The effects are like a pebble dropped into a pond. Circles of knowledge go out from the children and faculty to their families and neighborhoods. We’re all talking about Chef Paul and encouraging each other to make vitally important, healthy choices at UPS. Thank you Michelle Obama for your vision!
